Sanitizer Selection & Approval
- Is each sanitizer approved as a no-rinse food-contact sanitizing solution for its intended use? *
- Are sanitizer chemical specifications and safety data sheets on file? *
- Is the sanitizer appropriate for the target soils and surfaces being treated? *
Concentration & Contact Time
- Is sanitizer concentration verified with test strips or a titration kit at defined frequencies? *
- Is the required contact (dwell) time met before surfaces are used? *
- Is chlorine sanitizer maintained within 50-100 ppm at the appropriate temperature and pH?
- Measured sanitizer concentration (ppm)
CIP System Parameters
- Are CIP cycle parameters (time, temperature, concentration, flow) defined and documented? *
- Are CIP wash and rinse temperatures monitored and recorded each cycle? *
- Is flow velocity or spray coverage sufficient to reach all product-contact surfaces? *
- Recorded CIP wash temperature (°F)
Efficacy Validation
- Has the cleaning and sanitizing process been validated to achieve the target log reduction of microorganisms? *
- Is post-cleaning verification performed using ATP swabs, allergen swabs, or microbial swabs? *
- Are validation studies repeated after changes to chemicals, equipment, or soil load? *
- Recorded ATP verification result (RLU)
Verification & Records
- Are cleaning and sanitizing records reviewed and signed by a responsible person? *
- Are corrective actions documented when verification results exceed acceptable limits? *
- Is master sanitation and CIP performance trended over time? *
