Roles & Written Agreements

  • Are the responsibilities of shippers, loaders, carriers, and receivers defined by written agreement? *
  • Has the shipper specified in writing the sanitary requirements for the carrier's vehicles and equipment? *
  • Are operating temperature specifications communicated in writing to the carrier? *

Vehicles & Transportation Equipment

  • Are vehicles and transportation equipment designed and maintained to be adequately cleanable for their intended use? *
  • Is equipment maintained in sanitary condition to prevent food from becoming unsafe during transport? *
  • Are precautions taken to prevent cross-contamination with raw foods, non-food items, or previous cargo? *

Temperature Control

  • Is the vehicle pre-cooled and temperature controlled for foods that require time/temperature control for safety? *
  • Is temperature-control capability demonstrated and, where required, monitored during transport? *
  • Recorded trailer or product temperature at loading (°F)

Loading & Receiving

  • Does the loader verify that the vehicle is in appropriate sanitary condition before loading? *
  • Does the loader confirm a temperature-controlled unit is pre-cooled before loading TCS food? *
  • Does the receiver assess TCS food temperature on receipt to determine it was not subjected to unsafe conditions? *

Training & Records

  • Is training provided to carrier personnel on sanitary transportation practices where the carrier is responsible? *
  • Is training documented and retained while the person is employed and for 12 months after? *
  • Are written procedures, agreements, and training records retained for the required period? *
