  • Is a master sanitation schedule (MSS) documented listing every area, task, and frequency? *
  • Are written SSOPs available for each cleaning task specifying chemicals, dilution, and contact time? *
  • Are responsibilities assigned for each MSS task? *

Daily Sanitation Execution

  • Are food-contact surfaces cleaned and sanitized at the required frequency? *
  • Are non-food-contact surfaces cleaned to prevent them becoming a contamination source? *
  • Are cleaning tools segregated by zone/color to prevent cross-contamination? *

Chemical & Sanitizer Control

  • Are cleaning chemicals approved, labeled, and stored away from food and packaging? *
  • Is sanitizer concentration verified at use with titration or test strips? *
  • Measured sanitizer concentration (ppm)

Cleaning Effectiveness Verification

  • Are pre-operational inspections performed and documented before start-up? *
  • Is ATP or protein swabbing used to verify cleaning effectiveness on food-contact surfaces? *
  • ATP swab result (RLU)
  • Are periodic/deep-cleaning tasks (overhead, drains, hard-to-reach) completed on schedule? *

Corrective Action & Records

  • Are failed sanitation verifications documented with corrective action and re-clean? *
  • Are sanitation records signed, dated, and retained? *
  • Date of last completed periodic deep-clean cycle
