Grade A Dairy PMO Verification Checklist
Verify a Grade A dairy plant against the Pasteurized Milk Ordinance, covering pasteurization controls, sanitation, and equipment standards.

Pasteurization Controls
- Are minimum pasteurization time and temperature combinations met for the product type? *
- Is the HTST system equipped with a functioning flow-diversion device that diverts sub-legal milk? *
- Is the indicating thermometer and recording thermometer tested and in agreement? *
- Recorded pasteurization temperature (°F)
- Recorded hold time (seconds)
Equipment Standards
- Do product-contact surfaces meet 3-A Sanitary Standards or equivalent construction requirements? *
- Are pipelines and equipment cleaned and sanitized on a defined schedule (CIP/COP)? *
- Is the regenerator pressure differential maintained so raw product pressure is lower than pasteurized product? *
Raw Milk Receiving
- Is incoming raw milk cooled to 45°F or below and tested for antibiotics/drug residues before processing? *
- Are raw milk bacterial and somatic cell counts within Grade A limits? *
- Are tanker and silo storage temperatures monitored and recorded? *
Sanitation & Facility
- Is the plant water supply from an approved source and tested at required frequency? *
- Are toilet, handwashing, and drainage facilities compliant and maintained? *
- Is a documented pest control program in place? *
Coding, Labeling & Records
- Are finished products date-coded and labeled in accordance with PMO requirements? *
- Are pasteurization charts reviewed, signed, and retained for the required period? *
- Is the plant's Grade A permit current and IMS listing maintained? *
