Verify that compressed air and ice used in food contact or processing are controlled, filtered, tested, and free of contaminants.

Compressed Air Control

  • Is compressed air that directly or indirectly contacts food filtered to remove particulates, oil, and water? *
  • Are compressors specified as oil-free, or is oil-removal filtration verified where oil-lubricated compressors are used? *
  • Are air filters on a documented change and verification schedule? *
  • Is compressed air quality tested against a recognized standard (e.g., particle, water, oil classes)?

Ice as an Ingredient or Contact Surface

  • Is ice used in contact with food made from water that is safe and of adequate sanitary quality? *
  • Are ice machines and storage bins cleaned and sanitized on a documented schedule? *
  • Are dedicated, sanitized scoops stored to prevent contamination, and hand contact with ice prohibited? *
  • Is ice transported and held in clean, covered, food-grade containers?

Monitoring and Testing

  • Is ice periodically tested for microbiological quality (e.g., total coliform, E. coli)? *
  • Are test results reviewed against acceptance criteria with corrective action on failure? *
  • Date of last ice microbiological test
